Quick Protein Breakfast my kids love
Last week I accepted a close friend’s challenge to join him in “going veggie” for the next 60 days. Back in my twenties I’d followed a vegetarian diet for an entire year so found the challenge worthwhile. As the weather in Bothell warms up (hasn’t it been incredible this week?), eating and feeling lighter is perfect. And for busy moms and dads like me, you want to feed your family something healthy but that’s quick and easy too.
This 3-ingredient breakfast is amazing and you can literally make this in under a minute plus everyone enjoys it. The best part of this recipe is that when you add an 8 ounce glass of milk to wash down the peanut butter, you bring the total protein up to 17 grams! Talk about YUMMY~
Peanut Butter Cakes
- half of a banana
- 2 Tablespoons peanut butter
- 1 caramel rice cake
Instructions: simply spread the the peanut butter over the rice cake and top with sliced bananas. Don’t forget the cold glass of milk.
